15 MINUTES BREAKFAST!

EASY - QUICKLY - HEALTHY - WITHOUT BREAD!

Boiled eggs with cucumbers, potato salad, Greek yogurt & nectarine salad

Time planning is very important, therefore:


Start with preparing the Potato Salad:


Ingredients:



  • Water for boiling the potato.
  • 1 medium size potato
  • 0.5 minced garlic clove (or less, according to taste).
  • fresh parsley - the amount that can be held with your fingers. (about 20 leaves)
  • fresh mint - about 10 leaves.
  • a drizzle of olive oil 
  • lemon juice - half a lemon,
  • salt and pepper 
Directions: 
Peel the potato, and meanwhile start heating the water. Cut the potato into small cubes and put it to cook in the water (for about 12 minutes until soften.)

Immediately after putting the potatoes to cook, put 2 eggs to boil in another pot . 

Then, cut the parsley and the mint and leave a very small amount of the parsley aside (this will go to the nectarine salad).

Afterwards, start preparing the Nectarine Salad :
Ingredients: 
  • 1.5 nectarines cut into big slices. 
  • a pinch of parsley
  • a squeeze of lemon. 
Combine together and it's ready to serve! :)

After that, Take out a plate, cut over it a cucumber or any other vegetable. Put two spoons of Greek yogurt. 

When the potato is ready, remove the water, and add to it cold water in order to stop the cooking. Take out the cold water and in the same pot (the less dishes, the happier we are! ;) ) add all ingredients of the salad and blend. Put it on the plate. + Who needs bread when you have such a pleasing salad! 

Then, take the eggs from the hot water and hold it under the tap water for a few seconds. Peel, cut and put to plate.  

TADAAAM! A healthy breakfast that tastes good and takes no time! 

And a small tiny tip:
You can make a bigger amount of the potato salad and keep it in the fridge for a few days!
